Golden Apple-Nut Muffins
- 1 cup Honey
- 1/3 cups Safflower Oil
- 3 Large Eggs
- 2 cups Plain Yogurt
- 2 teaspoons Baking Powder
- 1 teaspoon Baking Soda
- 1 teaspoon Ground Nutmeg
- 1/2 teaspoons Salt
- 3 cups Whole Wheat Flour
- 2 Medium Baking Apples, Peeled, Cored And Diced
- 1 teaspoon Ground Cinnamon
- 1/2 cups Chopped Pecans
- Additional Cinnamon (optional)
- 1. In a large bowl, beat honey, oil, eggs, and yogurt until smooth. Add baking powder, baking soda, nutmeg, salt and 2 cups flour. Stir to combine. Add remaining flour and stir.
- 2. Combine apples, cinnamon, and pecans in a small bowl. Set aside.
- 3. Drop batter by heaping tablespoons in greased muffin tins. Drop apple filling by heaping teaspoons over batter. Top with 1 tablespoon batter and smooth over filling with a spoon. Sprinkle with additional cinnamon if desired.
- 4. Bake at 375u0b0F for 25-30 minutes or until a toothpick inserted in the middle comes out clean. Allow to cool 15 minutes before serving. Muffins can be stored in an airtight container for 1-2 days.
- Yields 2 dozen muffins.
