New Orleans Crab Cakes

  1. Saute onion, peppers, scallions and garlic in butter for 4 to 5 minutes.
  2. Add parsley, thyme, Bechamel sauce, bread, salt and cayenne pepper.
  3. Mix all and cook for 3 to 4 minutes.
  4. Take off the fire and when cool, form the mixture into 2-inch cakes.
  5. Roll in bread crumbs and saute in olive oil until golden brown.
  6. Serve hot with a cold cucumber dill sauce.
  7. Serves 12.
