New Orleans Crab Cakes
- 1 lb. blue crab meat
- 1 lb. snow crab meat
- 1/2 c. Bechamel sauce
- 1/2 c. wet bread, crust removed and squeezed well
- 1/2 c. onion, chopped fine
- 1/2 c. peppers, chopped fine
- 2 Tbsp. butter
- sprigs of thyme and parsley
- 1/3 c. chopped scallions (fine)
- 1 clove garlic, fine chopped
- 1 c. olive oil
- 2 c. bread crumbs
- salt and cayenne pepper to taste
- Saute onion, peppers, scallions and garlic in butter for 4 to 5 minutes.
- Add parsley, thyme, Bechamel sauce, bread, salt and cayenne pepper.
- Mix all and cook for 3 to 4 minutes.
- Take off the fire and when cool, form the mixture into 2-inch cakes.
- Roll in bread crumbs and saute in olive oil until golden brown.
- Serve hot with a cold cucumber dill sauce.
- Serves 12.
