Chops A La Jardinera

  1. Trim off fat from chops.
  2. Wash, drain and dry.
  3. Mix and crush the next 5 ingredients.
  4. Rub chops with this mixture.
  5. In a heavy kettle or skillet, brown chops lightly.
  6. Add the tomatoes, onions, bay leaf, 1 teaspoon salt, green peppers and carrots (including liquid from tomatoes).
  7. Bring to a boil over medium-high heat. Cover; turn heat to medium.
  8. Boil for 30 minutes.
  9. Uncover; boil for 20 to 30 minutes more.
  10. Drain the string beans and corn; add to the mixture.
  11. Boil for 10 minutes.
