Re-Enlistment Chicken
- 3 lb. chicken parts
- 3 oz. tomato paste
- 1/4 c. water
- 4 Tbsp. ketchup
- 2 onions, sliced
- 10 oz. mushrooms
- 1 small green pepper, chopped fine
- 1 Tbsp. oregano
- 2 Tbsp. Italian seasoning
- 1 tsp. parsley
- 1/2 c. grated Parmesan cheese
- 3 Tbsp. grated Romano cheese
- 1 Tbsp. garlic powder
- 1 c. Provolone or Mozzarella cheese
- salt and pepper
- Mix all ingredients together, except chicken and Provolone or Mozzarella cheese.
- Pour over chicken; cover and marinate in refrigerator for at least one day.
- Stir occasionally.
- Bake at 350u0b0 for about 1 hour.
- Before serving, sprinkle with the Mozzarella or Provolone cheese.
