Red Velvet Muffins
- 1-1/2 cup Flour
- 2 Tablespoons Cocoa Powder
- 3/4 cups Sugar
- 1 teaspoon Baking Soda
- 1/2 teaspoons Salt
- 1/3 cups Canola Oil
- 1 teaspoon Vinegar
- 1 whole Egg
- 1/3 cups Milk
- 1 teaspoon Red Food Coloring
- 2/3 cups Chocolate Chips
- Preheat oven to 375u0b0F. Prepare a 12-cup muffin tin with liners or spray.
- Combine flour, cocoa, sugar, baking soda, and salt. Set aside.
- In a large bowl, combine vegetable oil, vinegar, egg, milk, and coloring. Mix well. Gradually add the flour mixture, stirring until just combined. Fold in chocolate chips.
- Fill muffins tins, sprinkling with a few more chocolate chips if desired. Bake for 14-18 minutes. Cool for a few minutes before removing from the pan.
