Red Velvet Muffins

  1. Preheat oven to 375u0b0F. Prepare a 12-cup muffin tin with liners or spray.
  2. Combine flour, cocoa, sugar, baking soda, and salt. Set aside.
  3. In a large bowl, combine vegetable oil, vinegar, egg, milk, and coloring. Mix well. Gradually add the flour mixture, stirring until just combined. Fold in chocolate chips.
  4. Fill muffins tins, sprinkling with a few more chocolate chips if desired. Bake for 14-18 minutes. Cool for a few minutes before removing from the pan.
