Blueberry Banana Muffins(Yields 1 Dozen Muffins)
- 1 stick margarine
- 3/4 c. granulated sugar
- 2 eggs
- 2 to 3 bananas, mashed (1 c.)
- 1/2 c. milk
- 2 c. all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. ground cinnamon
- 2 c. fresh or frozen blueberries
- Preheat oven to 375u0b0.
- In medium bowl, cream margarine and sugar.
- Add eggs.
- Mix in bananas and milk.
- In another mixing bowl, combine flour, baking powder and cinnamon.
- Add margarine mixture to dry ingredients; mix only until moist.
- Stir in whole blueberries.
- If adding frozen ones, add them to your mixture while still frozen.
- Spoon batter into greased muffin cups, filling cup to top.
- Bake for 30 to 35 minutes or until muffins are golden brown.
- Let cool for 5 minutes, then transfer to cooling rack.
