Veggieful Chicken Soup
- 6 cups Water
- 3 whole Chicken Drumsticks
- 3 teaspoons Goji Berries
- 2 Tablespoons Dried Oysters
- 1 Tablespoon Dried Scallops
- 1/2 Tablespoons Powdered Ginger (or 3 Slices Fresh Ginger)
- 1 Tablespoon Salt
- 1 whole Onion, Peeled And Quartered
- 1 whole Carrot, Peeled And Cut Into Wedges
- 1 whole Potato, Peeled And Cut Into Wedges
- 1/4 heads (from About 1 Kilo Or 2 Lb. Size Head) Cabbage, Cored And Cut Into Big Chunks
- 1/2 cups Frozen Peas
- Before preparing ingredients, bring water to boil. Drop chicken drumsticks, goji berries, dried oysters and dried scallops into the boiling water. Add in ginger and salt.
- Meanwhile, prepare your veggies. Add onion, carrot and potato. Let water come to a boil then reduce to a simmer for 40 minutes.
- Toss in cabbage and peas and let it come to a boil again and reduce to a simmer for another 15 minutes.
- Check seasoning and serve up. Great with rice or even on its own.
- Note: If dried oysters and scallops are not available, substitute with 2 tablespoons fish sauce and omit salt.
