Literally Rocky Road Bars

  1. 1. Line an 8-inch square pan or form with parchment paper. Leave a paper overhang on two sides of the pan so that you are able to lift out the bars later.
  2. 2. Break or cut the chocolate into pieces. Place chocolate in the top of a double boiler and add butter and honey or syrup. Heat and stir until melted and smooth. Remove from heat and allow to cool for about 10 minutes.
  3. 3. In a large bowl stir together mini marshmallows, candy rocks (reserve a few of each for sprinkling) and broken up cookies. Then stir in the cooled chocolate mixture until everything is nicely coated.
  4. 4. Pour into the lined form and press in with a spoon. Sprinkle a few mini marshmallows and candy rocks on top.
  5. 5. Place in the fridge and chill for at least 2 hours. Lift chilled and hardened Rocky Road Bars out of the form and cut into bars.
