Literally Rocky Road Bars
- 225 grams Chocolate
- 100 grams Butter
- 2 Tablespoons Honey Or Syrup
- 100 grams Mini Marshmallows
- 100 grams Candy Rocks
- 225 grams Digestive Cookies/graham Crackers
- 1. Line an 8-inch square pan or form with parchment paper. Leave a paper overhang on two sides of the pan so that you are able to lift out the bars later.
- 2. Break or cut the chocolate into pieces. Place chocolate in the top of a double boiler and add butter and honey or syrup. Heat and stir until melted and smooth. Remove from heat and allow to cool for about 10 minutes.
- 3. In a large bowl stir together mini marshmallows, candy rocks (reserve a few of each for sprinkling) and broken up cookies. Then stir in the cooled chocolate mixture until everything is nicely coated.
- 4. Pour into the lined form and press in with a spoon. Sprinkle a few mini marshmallows and candy rocks on top.
- 5. Place in the fridge and chill for at least 2 hours. Lift chilled and hardened Rocky Road Bars out of the form and cut into bars.
