Fiesta Tamale Pie
- 1 1/2 lb. lean ground beef
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 1 tsp. salt
- 1 pkg. chili seasoning mix
- 1 lb. can tomatoes
- 1 (12 oz.) can corn, drained
- 1 (3 1/2 oz.) can pitted ripe black olives
- 1 c. yellow corn meal
- 1 tsp. salt
- 2 1/2 c. cold water
- 1 c. shredded Cheddar cheese
- Brown beef in skillet until crumbly.
- Mix in onion, green pepper, salt, chili seasoning mix and tomatoes.
- Simmer 10 minutes.
- Stir in corn and olives.
- Place in a 2-quart baking dish.
- Combine corn meal, salt and water in a saucepan.
- Cook, stirring until thick.
- Spread evenly over beef mixture, or make a 2-inch border of the corn meal mixture around the edge of casserole.
- Bake in 350u0b0 oven for 40 minutes.
- Sprinkle with cheese and bake until cheese is browned and melted.
- Serves 6 to 8.
