Ultimate Turtle Cheesecake
- 2 c. Oreo chocolate cookie crumbs
- 6 Tbsp. butter or margarine, melted
- 1 (14 oz.) bag caramels
- 1/2 c. milk
- 1/2 c. pecan pieces
- 3 (8 oz.) pkg. cream cheese, softened
- 3/4 c. sugar
- 1 Tbsp. vanilla
- 3 eggs
- 2 sq. semi-sweet baking chocolate
- Mix crumbs and butter.
- Press into bottom 2-inches upside of 9-inch spring-form pan.
- Microwave caramels and milk on High 3 minutes or until caramels completely melt.
- Stir every minute. Pour 1/2 mixture over crumb crust.
- Refrigerate 10 minutes.
- Set remaining mixture aside.
- Beat cream cheese, sugar and vanilla on medium until blended.
- Add eggs one at a time, mixing on low until blended.
- Pour over caramel mixture in crust.
- Bake at 325u0b0 for 1 hour and 5 minutes.
- Cool before removing sides of pan. Refrigerate 4 hours or overnight.
- Top with remaining caramel mixture and pecans before serving.
- Melt chocolate as directed on packaging; drizzle over cheesecake.
