Apple Cinnamon Streusel Muffins

  1. - Preheat oven to 375 degrees (F) and line 12 muffin tins with paper liners.
  2. - In a medium bowl, whisk together flours, baking powder, baking soda, nutmeg, and salt.
  3. - In the bowl of an electric mixture on medium speed, beat together butter, sugars, and eggs until light and fluffy. Reduce speed and mix in vanilla.
  4. - With a spatula, stir in apples and then gradually fold the wet mix into the flour mixture.
  5. - Divide the batter among the liners.
  6. - For the streusel, mix together brown sugar, flour, cinnamon, and nutmeg in a small bowl. Using a pastry cutter or 2 forks, cut the butter into the mixture until it is the consistency of bread crumbs. Sprinkle over the muffin batter.
  7. - Bake for 20 minutes, or until cake tester comes out clean.
  8. - Once done, allow to cool 5 minutes in the pan, then complete cooling on a wire rack.
