Peanut Butter Rice Crispy Bars
- FOR THE BARS:
- 2/3 cups Honey
- 3/4 cups Creamy (sugar-free) Peanut Butter
- 3 cups Crispy Rice Cereal
- FOR THE FROSTING:
- 1/4 cups Honey
- 1/4 cups Coconut Oil, Melted (no Substitutes)
- 1/3 cups Unsweetened Cocoa Powder
- For the bars:
- 1. In a small saucepan over medium heat, stir honey and peanut butter together until smooth.Simmer mixture over medium heat until it has a slight liquid consistency.
- 2. In a large bowl combine peanut-honey mixture and 2 1/2 cups cereal. Add enough remaining cereal to form a thick, but still moist consistency.
- 3. Press mixture into a greased (13 x 9 inch) baking dish and chill 2 hours.
- For the frosting:
- 4. Combine frosting ingredients and stir until smooth.
- 5. Spread bars with frosting. Refrigerate 20 minutes then cut into bars.
- Yield: 1 dozen bars
- Store bars in the refrigerator for up to 3 days.
