Rich Shrimp Bisque With Lobster Base
- 1 Tablespoon Extra Virgin Olive Oil
- 1 whole Medium Onion, Chopped
- 4 stalks Celery, Chopped
- 4 Tablespoons Butter
- 4 Tablespoons Flour
- 6 cups Water
- 10 whole Shallots (Green Onions), Chopped
- 1 Tablespoon Lobster Base
- 1/4 teaspoons Black Pepper
- 1 pound Shrimp, Peeled And Deveined
- 2 cups Heavy Cream
- 1. Saute onions and celery in oil over medium heat in large stockpot.
- 2. When onions become transparent, reduce heat and add butter, flour, water, shallots (green onions), lobster base and pepper.
- 3. Continue to cook on low heat setting for approximately 20 minutes. Stir until flour has sufficiently thickened the bisque. Do not bring to a boil.
- 4. Add shrimp and simmer until they become a pink/rose color and begin to firm, approximately 10 minutes.
- 5. Add cream and continue to stir for 5 minutes.
- 6. Salt and pepper to taste.
