Rich Shrimp Bisque With Lobster Base

  1. 1. Saute onions and celery in oil over medium heat in large stockpot.
  2. 2. When onions become transparent, reduce heat and add butter, flour, water, shallots (green onions), lobster base and pepper.
  3. 3. Continue to cook on low heat setting for approximately 20 minutes. Stir until flour has sufficiently thickened the bisque. Do not bring to a boil.
  4. 4. Add shrimp and simmer until they become a pink/rose color and begin to firm, approximately 10 minutes.
  5. 5. Add cream and continue to stir for 5 minutes.
  6. 6. Salt and pepper to taste.
