Dessert For Breakfast
- 1 cup Almond Milk (or Dairy), Divided
- 2 Tablespoons Unsweetened Cocoa Powder
- 2-1/8 ounces, weight Regular Oats (a Bit More Than 1/2 Cup)
- 2 whole Eggs
- 2 Tablespoons Honey
- 1 teaspoon Vanilla Extract
- 2 Tablespoons Creme De Cassis (optional)
- 1 ounces, weight Almond Meal Flour
- 1/2 teaspoons Baking Powder
- 1/2 teaspoons Coconut Oil (can Use Butter Too)
- 4-1/4 ounces, weight Pitted Cherries
- 1 whole Apple. Peeled, Cored, Diced.
- Heat the oven to 180u0b0C (350u0b0F).
- Mix half of almond milk with cocoa powder and oats; let it steep for 10 minutes. During this time, beat the eggs with remaining almond milk, honey, vanilla extract and creme de cassis. Stir in almond flour and baking powder, then finally stir in chocolate oat mixture.
- Place the baking tin for a few seconds in warm oven, this will make it easier to grease with coconut oil. Once the tin is greased, scatter cherries and diced apple, pour over the batter and bake for 30-40 minutes. Note: ovens differ, so after 30 minutes check with a wooden skewer.
- Once out of the oven, let it cool for a 10 minutes. Serve warm with a cup of tea or coffee! Enjoy!
