Honey Roasted Red Potatoes
- 1-1/2 pound Red Potatoes, Unpeeled And Cut Into 1" Chunks
- 3 Tablespoons Finely Diced Onion
- 4 Tablespoons Unsalted Butter, melted
- 2 Tablespoons Honey
- 2 teaspoons Dry Mustard
- 1/2 teaspoons Salt
- 1/8 teaspoons (or More) Cayenne Pepper
- Preheat the oven to 375u0b0F. Line a shallow baking pan with nonstick foil or spray the pan with nonstick cooking spray. Set the pan aside.
- Toss the potato cubes and diced onions together in a medium bowl.
- In a small bowl, combine the melted butter, honey, dry mustard, salt and cayenne pepper; mix well. Pour the butter mixture over the potatoes and onions. Toss to mix well.
- Spread the potatoes and any extra butter mixture left in the bowl on the prepared baking sheet, making sure that the potatoes are in a single layer.
- Bake at 375u0b0F for 35-40 minutes, stirring 2-3 times during baking time, until potatoes are tender and golden brown.
