Honey Roasted Red Potatoes

  1. Preheat the oven to 375u0b0F. Line a shallow baking pan with nonstick foil or spray the pan with nonstick cooking spray. Set the pan aside.
  2. Toss the potato cubes and diced onions together in a medium bowl.
  3. In a small bowl, combine the melted butter, honey, dry mustard, salt and cayenne pepper; mix well. Pour the butter mixture over the potatoes and onions. Toss to mix well.
  4. Spread the potatoes and any extra butter mixture left in the bowl on the prepared baking sheet, making sure that the potatoes are in a single layer.
  5. Bake at 375u0b0F for 35-40 minutes, stirring 2-3 times during baking time, until potatoes are tender and golden brown.
