German Sweet Chocolate Cake
- 1 (4 oz.) pkg. Baker's German's sweet chocolate
- 1/2 c. water
- 1 tsp. baking soda
- 1 c. (2 sticks) oleo or butter
- 2 c. sugar
- 1 tsp. vanilla
- 1 (12 oz.) can evaporated milk
- 1 1/2 c. sugar
- 1 1/2 tsp. vanilla
- 1 1/2 c. chopped pecans
- 2 c. all-purpose flour
- 1/4 tsp. salt
- 4 eggs, separated
- 1 c. buttermilk
- another 3/4 c. oleo
- 2 c. coconut
- Heat oven to 350u0b0. Line bottom of 3 (9-inch) cake pans with waxed paper. Melt chocolate squares with water. Can be on stove top or in microwave. Mix flour with baking soda and salt; set aside. Beat oleo and sugar until light and fluffy. Add egg yolks, one at a time, beating well. Stir in melted chocolate and vanilla. Add flour mixture alternating with buttermilk, beating well. Beat egg whites until they form stiff peaks. Gently stir into the batter. Pour into pans. Bake for 30 minutes. Remove from oven. Run spatula between cake and sides of pan while hot. Let cool for 15 minutes still in pans. Remove and peel off paper.
