Roast Potato Bites
- 1 pound, 1-2/3 ounces, weight Roasting Potatoes
- 7 ounces, weight Sweet Potato
- 3 Tablespoons Butter
- 2 Tablespoons Olive Oil
- 4 cloves Garlic
- Sea Salt, For Seasoning
- Preheat the oven to 190C (375F).
- Wash and peel the potatoes. Cut into small bite sized cubes and set aside.
- Cube the butter and place with the olive oil into a roasting pan. Place over medium heat on the stovetop and wait until the butter is melted.
- Peel the garlic and slice cloves in half, scattering around the pan and cook for a few seconds
- Place the roasting potatoes (not the sweet) in the roasting pan with the garlic and shake around till covered in the fat. Season with salt and remove from heat. Place into the preheated oven.
- Cook for around an hour or until potatoes are cooked, adding the sweet potatoes after the first 15 minutes or so, making sure to turn then regularly so that they crisp up on all sides and are always coated in the fat.
- Serve.
