Roasted Grape Tomato Soup

  1. 1. Put tomatoes, sliced onion and garlic on a baking sheet. Drizzle oil over all the veggies and sprinkle with salt, pepper and rosemary. Cook in a 350-degree oven for about one hour to one hour and 15 minutes.
  2. 2. Check the tomatoes every 20 minutes and move them around so all sides are roasted. Cook until they start to caramelize and brown.
  3. 3. Place the cooked tomato mixture into a blender. Add broth and puree. Add milk and salt and pepper to taste.
  4. 4. Makes approximately 1 quart.
