Roasted Grape Tomato Soup
- 2 packages (12 Oz. Package) Grape Tomatoes
- 1 whole Onion, Sliced
- 2 cloves Garlic, Peeled And Left Whole
- 4 cups Chicken Stock
- 1 Tablespoon Fresh Rosemary, Finely Chopped
- 1 cup Milk
- Canola Oil
- Kosher Salt
- Fresh Ground Black Pepper
- 1. Put tomatoes, sliced onion and garlic on a baking sheet. Drizzle oil over all the veggies and sprinkle with salt, pepper and rosemary. Cook in a 350-degree oven for about one hour to one hour and 15 minutes.
- 2. Check the tomatoes every 20 minutes and move them around so all sides are roasted. Cook until they start to caramelize and brown.
- 3. Place the cooked tomato mixture into a blender. Add broth and puree. Add milk and salt and pepper to taste.
- 4. Makes approximately 1 quart.
