Chocolate Cream Cheese Pie
- FOR THE CRUST:
- 1-1/2 cup Crushed Graham Crackers
- 1 cup Brown Sugar, Divided Into 1/4, 1/2 And 1/4 Cups
- 1/8 teaspoons Nutmeg
- 1 ounce, weight Square Unsweetened Chocolate, Melted
- 1/3 cups Margarine, Melted

- FOR THE FILLING:
- 6 ounces, weight Chocolate Chips
- 8 ounces, weight Cream Cheese
- 1/8 teaspoons Salt
- 1 teaspoon Vanilla
- 2 whole Eggs, Divided
- 1 cup Heavy Cream
- Crust:
- Mix graham crackers, 1/4 cup brown sugar, nutmeg, melted chocolate square, and melted margarine. Press into 9 inch pie plate.
- Filling:
- Melt the chocolate chips (using a double boiler) over hot water. Cool for 10 minutes.
- Blend cream cheese, 1/2 cup brown sugar, salt, and vanilla. Add the egg yolks one at a time. Beat. Add melted chocolate.
- Beat 2 egg whites until stiff. Gradually beat in 1/4 cup brown sugar. Beat until stiff and glossy. Fold chocolate mixture into beaten egg whites.
- Whip heavy cream until fluffy. Fold into chocolate/egg white mixture.
- Pour into chilled crust, and chill overnight.
- Try not to devour the whole thing before dawn.
