Chocolate Cream Cheese Pie

  1. Crust:
  2. Mix graham crackers, 1/4 cup brown sugar, nutmeg, melted chocolate square, and melted margarine. Press into 9 inch pie plate.
  3. Filling:
  4. Melt the chocolate chips (using a double boiler) over hot water. Cool for 10 minutes.
  5. Blend cream cheese, 1/2 cup brown sugar, salt, and vanilla. Add the egg yolks one at a time. Beat. Add melted chocolate.
  6. Beat 2 egg whites until stiff. Gradually beat in 1/4 cup brown sugar. Beat until stiff and glossy. Fold chocolate mixture into beaten egg whites.
  7. Whip heavy cream until fluffy. Fold into chocolate/egg white mixture.
  8. Pour into chilled crust, and chill overnight.
  9. Try not to devour the whole thing before dawn.
