Tropical Fruit Bread
- 2 large ripe bananas (about 1 c. mashed)
- 8 oz. can pineapple chunks
- 1 1/2 c. flour
- 3/4 c. sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 eggs
- 1/4 lb. butter (room temperature)
- 1/2 c. plus 1 Tbsp. flaked coconut
- Heat oven to 350u0b0.
- Butter a loaf pan.
- Mash bananas.
- Drain pineapple, chop and pat dry.
- With electric mixer on low speed, beat flour, sugar, baking powder, soda, salt, eggs, bananas and butter until blended.
- Increase speed to medium and beat 2 minutes.
- Stir in pineapple and 1/2 cup coconut.
- Pour into prepared pan and sprinkle with remaining 1 tablespoon coconut. Bake 1 hour (or until toothpick inserted in center comes out clean).
- Cool for 10 minutes.
- Remove from pan and cool completely.
