Peanut Butter Fudge Cake
- 2 c. all-purpose flour
- 2 c. sugar
- 1 tsp. baking soda
- 1 c. margarine
- 1 c. water
- 1/4 c. unsweetened cocoa
- 2 eggs
- 1/2 c. buttermilk
- 1 tsp. vanilla
- 1/3 c. margarine
- 1/4 c. buttermilk
- 3 Tbsp. cocoa
- 3 1/2 c. sifted powdered sugar
- 1 tsp. vanilla
- 1 1/2 c. peanut butter
- 1 Tbsp. cooking or peanut oil
- For cake:
- Combine flour, sugar and soda in a mixing bowl; set aside.
- Combine margarine, water and 1/4 cup unsweetened cocoa. Bring to boiling, stirring constantly.
- Remove from heat; add the chocolate mixture to dry ingredients and beat on medium speed until combined.
- Add eggs, 1/2 cup buttermilk and 1 teaspoon of vanilla.
- Beat one minute; batter will be thin.
- Pour into a greased and floured 13 x 9 x 2-inch pan.
- Bake at 350u0b0 for about 35 minutes or until toothpick comes out clean.
