Payday Bars
- 1 box Rice Chex Cereal (12 Oz Box)
- 2 cups Peanuts
- 2 cups White Sugar
- 3 cups White Corn Syrup Or Karo Syrup
- 2 teaspoons Vanilla
- 1 jar Chunky Peanut Butter (16-18 Oz. Jar)
- Butter a 12x18 rimmed cookie sheet or shallow pan. Make sure that you butter the sides and bottom very well. Parchment paper is not recommended.
- Combine Rice Chex and peanuts in a very large bowl.
- Combine sugar and corn syrup in heavy duty saucepan. Heat to a full boil, stirring constantly. Be careful not to burn. Once boiling, remove pan from heat, stir and blend in vanilla and peanut butter.
- Pour blended syrup mixture into Rice Chex mixture and mix very well. This will be quite hard to mix, so use a heavy duty spoon (I have broken a couple during this process).
- Pour mixture into prepared cookie sheet or pan. Press it so that the top is smooth and it covers the entire surface of the pan.
- Cool and cut into squares.
