Applesauce Cake Roll
- 3 eggs
- 3/4 c. sugar
- 1/2 c. applesauce
- 1 c. flour
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/4 tsp. salt
- 1/4 tsp. cloves
- 1 (4 1/2 oz.) container Cool Whip
- 1/2 c. applesauce
- 1/3 c. chopped nuts
- Beat eggs until thick; gradually add sugar and beat well.
- Add applesauce.
- Sift flour, baking powder, baking soda, salt, cinnamon and cloves; fold in lightly.
- Spread on greased and paper-lined jellyroll pan, 15 x 10 x 1-inch.
- Bake at 350u0b0 for 15 minutes.
- Loosen and release on cloth sprinkled with confectioners sugar.
- Roll up; cool and unroll.
- Mix applesauce and Cool Whip; spread on cake.
- Roll up; slice and top with dabs of whipped cream and chopped nuts.
- Serves 8 to 10.
