Banana Walnut Doughnuts With Peanut Butter Glaze
- FOR THE DOUGHNUTS:
- 1/2 cups Almond Flour
- 1/2 cups Whole Wheat Pastry Flour
- 1/4 cups Sugar
- 1 teaspoon Baking Powder
- 1/2 teaspoons Cinnamon
- 1/8 teaspoons Sea Salt
- 1 Large Ripe Banana, Peeled And Mashed
- 1 Egg
- 2 Tablespoons Milk
- 1 teaspoon Vanilla
- 3/4 cups Candied Walnuts, Broken Into Pieces
- FOR THE PEANUT BUTTER GLAZE:
- 3 Tablespoons Peanut Butter, Or P2B Powder
- 1 Tablespoon Milk
- 1/4 cups Powdered Sugar
- Preheat oven to 425 F. Spray a 6-count doughnut pan with cooking spray.
- In a large bowl combine both flours, sugar, baking powder, cinnamon, and salt. Set aside.
- In a separate smaller mixing bowl add in banana, egg, milk, and vanilla. Whisk until well combined. Add this mixture into the dry mixture until well mixed. Fold in 1/2 cup walnuts.
- Pour into prepared baking pan, and sprinkle tops with remaining 1/4 cup candied walnut pieces if desired. Bake for 7 minutes, until doughnuts are puffed up, and no longer doughy.
- Remove from oven, set pan on a rack and let doughnuts rest for 5 minutes. Then remove them from the baking pan and cool doughnuts for 15 minutes on wire racks.
- Meanwhile make the glaze: Combine all ingredients in a small bowl and stir until smooth. Add more milk if needed, or microwave your peanut butter to soften it if needed. Pour glaze over doughnuts and enjoy!
