Hurry Up Chocolate Cake
- FOR THE CAKE:
- 2 cups Flour
- 2 cups Sugar
- 1/2 cups Baking Cocoa Powder
- 2 teaspoons Baking Soda
- 1/4 teaspoons Salt
- 1 cup Buttermilk
- 1 cup Canola Oil
- 2 whole Eggs
- 1 cup Boiling Water

- FOR THE FROSTING:
- 2 ounces, weight Baker's Chocolate (2 Squares)
- 1/3 cups Butter
- 1 whole Egg (or Egg Substitute)
- 1 teaspoon Vanilla
- 2 cups Powdered Sugar
- 2 Tablespoons Hot Coffee
- For the cake:
- Preheat oven to 350F.
- Grease and flour (or I use cocoa powder) a 9x13 baking dish (I prefer glass). In a mixer, combine flour, sugar, cocoa powder, baking soda and salt. Add buttermilk, oil, and eggs and mix well. Then, slowly stream the boiling water into the mixer and mix until completely combined (making sure you scrape the sides of the mixing bowl). The batter will be VERY thin! Pour into your prepared baking dish and bake for 45 - 50 minutes, or until a toothpick inserted in the middle comes out clean!
- For the frosting:
- Melt chocolate baking squares and butter in a saucepan until completely combined and melted. Remove from heat and add egg (or egg subsitute) and vanilla and mix until smooth. Gradually add powdered sugar and coffee until frosting becomes smooth with no lumps. Frost cake when cake is completely cooled.
- Recipe note: This cake batter can also be used to make 24 cupcakes, baking them for about 25-30 minutes and using the same frosting recipe!
