Chocolate-Chocolate Chip Cookies
- 1 cup Butter (2 Sticks)
- 3/4 cups Brown Sugar, Packed
- 1 cup Fine Granulated Sugar
- 1-1/2 teaspoon Vanilla
- 2 whole Eggs
- 2 cups All-purpose Flour
- 2/3 cups Unsweetened Cocoa
- 1 teaspoon Baking Soda
- 12 ounces, weight Semi Sweet Or Bitter Sweet Chocolate
- 1/2 cups Chopped Walnuts
- Cream the butter with both sugars till fluffy. Add vanilla. Add both eggs and mix well.
- Mix together the flour, cocoa and baking soda and add to the first mixture. Mix until just combined. Fold in the chocolate chips and nuts.
- Refrigerate overnight.
- Take a rounded tablespoonful of the batter (approximately 1-1/2 tablespoons) and roll it into your hands to make a ball.
- Bake at 350 degrees on a baking sheet that has been lined with parchment paper, for 11-12 minutes. They'll look slightly underdone at that point but take them out of the oven and let them sit on the baking sheet a couple minutes before removing them to cool completely on a wire rack.
