Outrageous Mushroom Casserole
- 24 ounces, weight Mushrooms
- 1 stick Butter
- 1/2 whole Onion, Minced
- 4 slices Bread, Cubed
- 1/4 cups Sour Cream
- 1/2 teaspoons Garlic Powder
- 16 ounces, weight Monterey Jack & Cheddar Cheese Blend, Shredded
- Paprika, To Sprinkle On Top
- Clean mushrooms. Separate caps from stems.
- Melt butter. Saute onion in butter until transparent. Add mushroom stems; brown lightly. Remove from heat. Add caps, bread, sour cream, garlic powder and stir to mix.
- In a greased casserole, layer 1/2 of mushroom mixture. Add half of the cheese. Repeat, ending with cheese. Sprinkle with paprika.
- Bake at 350F for 20-30 minutes.
- Note: You can use up to 6 slices bread and up to 1/2 cup sour cream. I have used whatever bread I have had on hand, whole wheat, white, etc. I have also used mozzarella cheese instead of the Jack cheese.)
