Mandarin Orange And Lettuce Salad
- FOR THE SALAD:
- 1/2 whole Medium Head Iceberg Lettuce, Chopped
- 1/2 whole Head Greenleaf Lettuce, Chopped Or Torn
- 1/2 bags (6 Oz. Bag) Fresh Baby Spinach, Roughly Chopped
- 1 whole Cucumber, Quartered Lengthwise And Sliced
- 1 whole Avocado, Peeled And Diced
- 1/2 whole Red Pepper, Finely Diced
- 1 can (11 Oz. Can) Mandarin Oranges, Drained
- 1/2 cups Sliced Almonds (roasted With Honey, Optional)

- FOR THE DRESSING:
- 1/3 cups Vegetable Oil
- 1/3 cups Vinegar
- 1/2 cups Sugar
- 2 teaspoons Poppyseeds, Optional
- Blend the dressing ingredients together. Prepare all salad ingredients and toss together with dressing just before serving.
- This recipe can be doubled to serve a large crowd of 30-40 people.
