Nanaimo Bars
- 1/2 cups Butter, Melted
- 1/4 cups Brown Sugar
- 3 Tablespoons Cocoa Powder
- 1 whole Egg, Beaten
- 2 cups Graham Cracker Crumbs
- 1 cup Shredded Coconut
- 1/2 cups Chopped Walnuts (optional)
- 2 cups Powdered Sugar
- 1/4 cups Butter, Softened Until Room Temperature
- 1/4 cups Cream Or Milk
- 2 Tablespoons Custard Powder (like Bird's) Or 2 Tbsp Vanilla Pudding Powder
- 3 ounces, weight Chocolate Squares (semisweet)
- 1/4 cups Butter
- First Layer:
- Slightly grease a 9" square baking pan. Combine 1/2 cup melted butter, 1/4 cup brown sugar, 3 tablespoons cocoa powder, 1 egg, 2 cups graham cracker crumbs and 1 cup coconut (and maybe 1/2 cup nuts if you'd like) together in a bowl and then smoosh it evenly into the pan. You're hands will get greasy. Place pan in the fridge for 30-60 minutes until firm.
- Second Layer:
- Beat 2 cups powdered sugar, 1/4 cup butter (room temperature), 1/4 cup milk or cream, and 2 tablespoons of custard powder (or pudding powder) with mixer until smooth and fluffy. Carefully spread this layer evenly over the first layer.
- Third Layer:
- Melt the three - 1 ounce chocolate squares and 1/4 cup butter in a saucepan together. Remove from heat once it's all melted. Let it cool until it is no longer melted chocolate magma, but it is still liquidy. Spread over second layer. Chill the whole pan for several hours.
- Cut into small bars, it's very very rich and you don't need much!
