Oatmeal Cookies With Chocolate Covered Raisins
- 3/4 cups Butter, Softened
- 1 cup Brown Sugar
- 1/2 cups Sugar
- 2 whole Eggs
- 1 teaspoon Vanilla
- 1-3/4 cup All-purpose Flour
- 1 teaspoon Baking Powder
- 1/2 teaspoons Cinnamon
- 2 cups Oats
- 12 ounces, weight (1 1/2 Cups) Chocolate Covered Raisins
- Preheat oven to 375 degrees. In a large mixing bowl, beat butter and sugars together. Add eggs and vanilla, and beat until combined. Add flour, baking powder, cinnamon, and oats. Beat until combined. Stir in chocolate-covered raisins. Scoop onto cookie sheets with a cookie scoop or in 1 1/2-inch balls about 2-inches apart. Bake for 10 to 12 minutes or until lightly browned. Remove to wire rack to cool.
