Banana Waffles

  1. Preheat waffle maker.
  2. Combine the dry ingredients in a large bowl.
  3. Melt the butter and set aside to cool slightly.
  4. In a medium bowl, mash the bananas well. Add the yolks, sour cream and mix well. Add the butter and the milk. Add the wet ingredients to the dry ingredients and mix well.
  5. Whisk the egg whites in a very clean bowl with a wire whisk. (This should take 2-3 minutes of whisking. Alternatively you could use an electric mixer.) Whisk them until they form stiff peaks. Gently fold the whites into the batter until they form a fluffy batter.
  6. Ladle the batter into the waffle maker (greased if necessary) and cook until the waffles are golden brown. Serve hot with the condiments of your choice!
