Vegan Blueberry Waffles
- 2 cups All-purpose Flour
- 1 Tablespoon Baking Powder
- 1/4 teaspoons Salt
- 1 Tablespoon Sugar
- 1-3/4 cup Plain Soy Milk
- 1 teaspoon Vanilla Extract
- 1 whole Banana, Very Ripe And Flecked With Brown
- 1 Tablespoon Canola Oil
- 1 cup Frozen Blueberries
- Mix all dry ingredients together in a large bowl.
- Mix wet ingredients with banana, blending well. Add the wet ingredients to the dry ingredients. Stir in the blueberries.
- Let the mixture sit for 10 minutes.
- Warm a waffle iron and spray with nonstick spray. Pour about 3/4 cup of batter onto the iron for each waffle and close the lid. Check your appliance's instructions for proper cook time. Alternatively, watch the steam coming from the waffle iron; when it stops steaming, the waffles are done.
