Drunken Spinach Biscuits
- 3/4 cups All-purpose Flour
- 1/4 cups Whole Wheat Flour, Plus Extra To Dust Work Surface
- 1/2 Tablespoons Baking Powder
- 1/2 teaspoons Salt
- 2-1/2 Tablespoons Butter Or Margarine
- 1/2 cups Beer
- 1 cup Fresh Spinach Leaves, Torn Into Very Small Pieces
- Heat oven to 425F.
- Whisk together flours, baking powder, and salt. Cut in the butter or margarine. Stir in the beer, just enough to bring the dough together. You should have a soft dough that's not sticky and is easy to handle.
- Turn out dough onto a smooth surface that has been lightly floured with whole wheat flour. Knead in the spinach but be careful not to overknead the dough.
- Pat the dough to 1-inch thick and cut with a 2-inch biscuit cutter or a juice glass. Place on a baking sheet and bake for about 12-15 minutes or until the tops begin to brown lightly.
