Plantains In Sweet Caramel Syrup
- 5 pieces Ripe Plantains, Peeled But Not Cut
- 1/3 cups Brown Sugar
- 4 cups Water
- 1 dash Salt
- Note: I used brown sugar because I want my sweet plantains to be a colorful red. If you have white sugar at home, you can also use that. The nutritional difference wouldn't matter much. However, note that your sweet bananas will be of a lighter shade.
- To start, place all the ingredients in a pan. Cover and cook over medium to high heat. Let it boil for 20 minutes.
- By this time, the bananas will have already cooked. Lower the heat to medium but make sure the water is still boiling. Now we caramelize the syrup together with the bananas.
- Wait for the liquids to thicken. It may take at least 15-20 more minutes. When the syrup is thick and turns a lovely red color, turn the heat off.
- Let the bananas cool down in a dish. Serve with a cold drink!
