Oven Fried Parmesan Zucchini Chips
- 1 Tablespoon Olive Oil
- 2 whole Zucchini
- 1 cup Panko Bread Crumbs
- 1/2 cups Shredded Parmesan Cheese
- 1/2 teaspoons Kosher Salt
- 1/2 teaspoons Onion Powder
- 1/8 teaspoons Fresh Ground Black Pepper
- 1 Tablespoon Italian Seasoning
- 1/3 cups Milk
- Preheat oven to 425u0b0 F. Brush a large oven-proof wire rack with olive oil and set on a baking sheet.
- Cut the zucchini into 1/4" slices. In a bowl, whisk together bread crumbs, Parmesan, salt, onion powder, pepper and Italian seasoning. Place milk in a separate shallow bowl. Dip zucchini slices in milk then in breadcrumb mixture, patting the crumbs on. Place slices on the wire rack. Repeat until all are coated.
- Bake for 30 minutes or until golden brown.
