Apple-Raisin Oatmeal Cookies
- 1 1/3 c. whole wheat flour
- 3/4 c. wheat germ
- 1/2 c. rolled oats
- 1 Tbsp. baking powder
- 1 1/2 tsp. cinnamon
- 1/2 tsp. ginger
- 1 c. apple juice concentrate
- 1/4 c. vegetable oil
- 1 egg
- 2/3 c. raisins
- 1/4 c. dried apples
- 2 Tbsp. applesauce
- 1/4 c. sugar (optional)
- Preheat oven to 375u0b0.
- In a large mixing bowl, combine flour, wheat germ, oats, baking powder, cinnamon, sugar and ginger.
- In a blender, combine juice concentrate, oil, egg, raisins, dried apples and applesauce.
- Blend at medium speed until raisins and apples are chopped.
- Stir juice mixture into dry ingredients and combine thoroughly.
- Drop batter by heaping teaspoonful onto nonstick cookie sheets.
- Flatten each with a fork and bake 10 to 12 minutes until top springs back at your touch.
- Do not brown or crisp! Cool on cookie sheets before removing to rack.
- Yield:
- 3 dozen.
