Hearty Maple Corn Bread

  1. Preheat the oven to 400 degrees. Oil a baking dish (9x9 or two bread pans).
  2. Combine all the dry ingredients in a large bowl. In a second bowl combine the eggs and oil. Then add the milk to the egg and oil mixture. Mix until combined. Add the wet ingredients into the dry. Mix until just combined. Don't overmix. Pour batter into the pan and cook immediately. Remove when a toothpick or knife inserted into the center of the bread comes out clean, roughly 20 to 25 minutes.
  3. Serve warm with butter or along with your favorite meal.
