Gluten-Free Molasses Sugar Cookies
- 1 cup Sugar, Plus 2 Tablespoons For Rolling Cookies
- 1 whole Egg
- 3/4 cups Oil
- 1 cup Molasses
- 2 teaspoons Baking Soda
- 1/4 teaspoons Salt
- 2 cups Jules Gluten-free Flour
- 1/2 teaspoons Cloves
- 1/4 teaspoons Ginger
- 1 teaspoon Cinnamon
- Blend 1 cup sugar and egg until light and fluffy. Slowly add oil, molasses, soda, salt, flour, cloves, ginger and cinnamon. Blend until all ingredients are incorporated. Refrigerate for 2 hours before baking your cookies.
- Preheat oven to 350u0b0F.
- To form cookies, use a small cookie scooper the size of a tablespoon and roll into balls. Roll each ball in sugar to coat evenly. Place cookies on a baking sheet lined with parchment paper. Bake cookies for 10 minutes, which will yield a cookie that is a little under-baked but perfect for a nice chewy cookie.
