Easy (Secret Ingredient) Onion Rings

  1. Pour oil in a high-sided skillet and heat over medium high heat while slicing onion. In a medium bowl mix pancake mix, water and seasonings. You can add more water if it's too thick. What you want is a batter consistency.
  2. When oil reaches about 370 degrees, start dipping onion slices into batter, then quickly place into hot oil. (I use a large fork to do this so the extra batter drains away and I don't have to get my hands too messy!) Continue with more onion slices until a single layer is on the bottom of the pan, being careful not to crowd the pan. Fry, turning once, until golden and crispy, about 1-3 minutes per batch. It really depends on the heat of the oil, h0w wet the batter is and how thick the onions are sliced.
  3. Continue with more batches until done. Remove with tongs or a slotted spoon to a paper towel-lined cookie sheet and sprinkle with more salt if needed. The pancake batter is the secret ingredient!
