Cinnamon And Apple Baked French Toast
- 6 whole Slices Cinnamon Raisin Bread, Cut Into Cubes
- 1 cup Apple, Peeled, Cored, Diced Small
- 1/4 teaspoons Cinnamon
- 1/2 teaspoons Stevia Or Sugar
- 3/4 cups Egg Substitute
- 3/4 cups Unsweetened Coconut Milk, Or Non Fat Milk
- 1 cup Greek Yogurt, Plain
- 1/4 teaspoons Salt
- 1 teaspoon Stevia
- 2 teaspoons Vanilla Extract
- Spray a roughly 6 x 4-inch baking dish with cooking spray; and lay the bread slices into the dish.
- In a bowl, add your apples, cinnamon and 1/2 teaspoon stevia; mix well and spread it across the bread slices (I also stuck some in between the bread slices).
- In a bowl, add egg substitute, coconut milk, yogurt, salt, 1 teaspoon stevia and vanilla extract. Mix well and pour over the top of your bread and apple mixture. Push the bread down with a spoon to make sure it gets covered with the mixture. Cover and refrigerate overnight.
- Take bread mixture out of the refrigerator and set aside while the oven preheats.
- Preheat oven to 400 F. Put the dish into the preheated oven and bake French toast for 30-50 minutes. (Mine froze in the refrigerator, so my cooking time maybe off. It took me 50 minutes, but 35-40 minutes should be enough if yours isn't frozen.) Once the center is firm, the French toast bake is done. If the top starts to brown, gently cover it with with aluminium foil.
- Remove dish from the oven and set it on a rack. Let the French toast cool for a few minutes and serve warm. Top with maple syrup if desired.
