Oreo Cake Bars
- 1 box Chocolate Cake Mix, 18 Ounce Box
- 2 whole Large Eggs, Divided Use
- 1-1/2 stick Butter, Divided Use (melt Each Stick Separately)
- 1 package 8 Ounces Package, Cream Cheese, Room Temperature
- 1 box 16 Ounce Box, Confectioners Sugar
- 2 teaspoons Vanilla Extract
- 1-1/2 Tablespoon Cocoa Powder
- 1 container 8 Ounce Size, Whipped Cream Topping (like Cool Whip)
- 10 whole Oreo Cookies, Chopped
- Preheat oven to 350 F. Spray a 9x13 inch baking pan with non-stick baking spray.
- In a large sized bowl, add chocolate cake mix, 1 egg, and 1 stick melted butter and whisk together until well mixed. Add the cake mixture to the sprayed pan and pat down into the bottom of the pan.
- Using a hand mixer and large bowl or the bowl of a stand mixer, add cream cheese and beat until light and fluffy. Bring the mixer to low and add in powdered sugar and vanilla extract. Remove half of the mixture to another medium sized bowl and place that bowl to the side.
- Back in the mixing bowl, beat in one egg, remaining 1/2 stick of melted butter and 1 1/2 tablespoons of cocoa powder. Spread this over the cake mixture in the pan. Bake for 30-35 minutes. Do not over-bake this cake. It should remain gooey and not completely done in the center when it is done baking. Remove pan from the oven and set it on a rack. Allow to cool.
- Into the medium sized bowl of cream cheese mixture, add the whipped topping and fold in. Lastly add 1/2 of chopped Oreos and fold them in. Spread Oreo topping on top of gooey cake and sprinkle with remaining chopped Oreos. Place tray in the refrigerator for 40 minutes before cutting into squares and serving.
- Makes 20-24 bars.
