White Chocolate Butterscotch Cashew Cookies
- 1 cup Butter
- 1 cup Brown Sugar
- 1 cup Sugar
- 2 whole Eggs
- 2 teaspoons Vanilla
- 3 cups Flour
- 1/2 teaspoons Baking Soda
- 1 teaspoon Salt
- 1 cup White Chocolate Chips
- 1 cup Butterscotch Chips
- 1 cup Cashew Nuts, Chopped
- Preheat oven to 350 F.
- In a large bowl, cream butter and sugars together until creamy. Add eggs one at a time, mixing in between. Then mix in the vanilla. Gently stir in flour, baking soda and salt. Mix in chips and cashews.
- Drop dough by teaspoons onto a Silpat- or parchment paper-lined baking sheet, spacing about 2 inches apart. Bake for 10 minutes or just until edges are lightly browned. Remove pan from the oven and set it on a cooling rack. Allow cookies to cool on baking sheet for 1-2 minutes before removing them from the pan to a cooling rack.
