Quinoa Salad With Goats Cheese

  1. Put the quinoa in a pan and add 100ml water. Bring to the boil and cook the quinoa for 8 minutes on medium heat.
  2. When the quinoa is cooked and the water has evaporated, add a little olive oil and use a garlic press to press the garlic into the pan. Also add a dash of paprika and chili to the quinoa. Stir and fry for 1 minute.
  3. Turn the heat of and let it sit for a couple of minutes.
  4. Dice the cucumber, tomatoes and avocado. Put all the vegetables in a bowl. Add the olives and goat cheese.
  5. Dress the salad with olive oil, lemon juice, salt and pepper. Add the quinoa and mix together.
  6. Enjoy!
