Roasted Vegetable Medley
- 2 cups Chopped Onions
- 2 cups Chopped Red, Yellow, And Orange Bell Peppers
- 2 cups Chopped Asparagus, In 2-inch Pieces
- 1-1/2 cup Sliced Cucumber
- 1 cup Cubed Acorn Squash
- 1 cup Sliced Bella Mushrooms
- 1 cup Chopped String Beans, In 1-inch Pieces
- 2 Tablespoons Olive Oil
- 1 Tablespoon Ground Black Pepper
- 1 teaspoon Cayenne Pepper
- 1 Tablespoon Kosher Salt
- 1/3 cups Fresh Dill
- Preheat oven to 400u0b0F.
- In a large bowl, combine all of the ingredients. (Note: Add oil and spices after adding vegetables.) Blend mixture by hand to ensure that all vegetables are properly coated.
- Pour vegetables into an aluminum pan and place it into the oven. After 20 minutes, stir vegetables then let cook for the remaining 15 minutes.
- Remove from heat and serve.
