Rockin’ Rotini Salad
- 3 cups Rotini, Uncooked
- 1 whole Sm Green Pepper, Chopped & Seeded
- 1 whole Sm Red Pepper, Chopped & Seeded
- 1-1/2 cup English Cucumber, Chopped Small
- 1 whole Plum Tomato, Chopped Small
- 1 bunch Green Onions, Sliced Thinly
- 2/3 cups Sugar
- 1/2 cups Vegetable Oil
- 1/3 cups Ketchup
- 1/4 cups White Vinegar
- 1 teaspoon Salt
- 1/4 teaspoons Pepper
- 1 teaspoon Paprika
- Cook rotini according to package directions. Rinse under cold water to chill and keep from sticking. Pour into a large bowl.
- Add all chopped vegetables and toss lightly.
- Whisk together remaining ingredients in a small bowl, and pour over rotini and vegetables. Toss lightly.
- Chill at least 2 hours to combine flavours.
