Low Carb Peanut Butter Swirl Frozen Yogurt
- 2 cups Plain, Greek Yogurt (2%)
- 1/2 cups Milk Of Choice (I Used 1%)
- 1/2 cups Peanut Butter, No Sugar Added
- 1 Banana, Mashed
- 1 teaspoon Vanilla Extract
- 1 teaspoon Vanilla Liquid Stevia
- 2 Tablespoons Powdered Stevia
- 1/4 teaspoons Salt
- 2 Tablespoons Additional Peanut Butter, For Swirl Effect (optional)
- Blend all ingredients together (except optional peanut butter for swirling) in a stand mixer or blender. Pour mixture into an ice cream machine. Follow manufacturer's directions of your machine.
- Once done, stir in the optional peanut butter or top onto each serving. Enjoy immediately as soft serve or freeze in a shallow airtight container for 2-3 hours until hardened. Allow to defrost for a few minutes on counter in order to scoop easily. If frozen overnight, allow to thaw for 30 minutes on counter to scoop easily.
- Makes about 1 quart.
