Low Carb Peanut Butter Swirl Frozen Yogurt

  1. Blend all ingredients together (except optional peanut butter for swirling) in a stand mixer or blender. Pour mixture into an ice cream machine. Follow manufacturer's directions of your machine.
  2. Once done, stir in the optional peanut butter or top onto each serving. Enjoy immediately as soft serve or freeze in a shallow airtight container for 2-3 hours until hardened. Allow to defrost for a few minutes on counter in order to scoop easily. If frozen overnight, allow to thaw for 30 minutes on counter to scoop easily.
  3. Makes about 1 quart.
