Chicken And Wild Rice Salad

  1. Cook rice according to package directions, leaving out butter. Set aside to cool.
  2. In large bowl, combine chicken, broth, lemon juice, salt and pepper.
  3. Add red pepper, celery, onions and reserved rice.
  4. Gently stir in green peas and nuts.
  5. Cover and refrigerate until thoroughly chilled.
  6. Serve on lettuce leaves. Serves 6.
