Fried Squash
- 1 Yellow Squash
- 1 cup Flour
- 1 cup Corn Meal
- 1/2 teaspoons Black Pepper
- 1 teaspoon Sea Salt
- 1/2 cups Milk
- 1/4 cups Light Tasting Olive Oil
- 1/2 cups Butter Flavored Shortening
- Slice squash into thin slices. (Cut slices in half if they're large.) Mix flour, corn meal, black pepper, and sea salt together in a bowl. Pour milk into a separate bowl. Drop 6-8 slices of squash into the milk, then transfer the slices to the flour mixture. (I like to place them in a third bowl when I'm finished breading them.)
- Once all slices are breaded, set them aside and heat the oil and butter-flavored shortening in a cast iron skillet. Once the shortening has melted, wait another 2 minutes (approximately) for the oil to warm up nicely. Then transfer the squash (all at once) in to the skillet. Stir periodically until all pieces are browned (longer if desired).
- Do not worry if the breading falls off of some slices, it will still taste just fine! Use a slotted spoon to transfer squash to a bowl lined with a paper towel. Let sit a few moments and then enjoy!
