Stuffing Casserole
- 4 c. water
- 1 1/2 c. Minute rice
- 1 can cream of mushroom soup (undiluted)
- 1 box Stove Top stuffing mix
- 1 small can drained mushrooms
- 1 (10 oz.) pkg. frozen broccoli, thawed and drained
- 1 (10 oz.) pkg. frozen cauliflower, thawed and drained
- 1/2 c. each celery and onions, sauteed in 1 stick margarine
- slices Mozzarella cheese
- Saute celery and onions.
- Set aside.
- Cook rice in the 4 cups of boiling water (per cooking instructions).
- After the 5 minute period, add stuffing mix, seasoning, soup, celery, onions, vegetables and mushrooms. Mix.
- Place in large casserole or 9 x 13-inch baking pan.
- Top with Mozzarella cheese slices (you might add cheese after baking for 15 minutes).
- Bake at 350u0b0 for 30 to 45 minutes.
