Classic Chicken Divan
- 2 (10 oz.) pkg. frozen broccoli spears
- 1/4 c. butter or margarine
- 6 Tbsp. all-purpose flour
- 2 c. chicken broth
- 1/2 c. whipping cream
- 3 Tbsp. dry wine (optional)
- 3 chicken breasts, halved and cooked
- 1/4 c. grated Parmesan cheese
- Cook broccoli using package directions, drain.
- Melt butter; blend in flour, 1/2 teaspoon salt and dash of pepper.
- Add chicken broth, cook and stir until mixture thickens and bubbles.
- Stir in cream and wine.
- Place broccoli crosswise in 12 x 7 1/2 x 2-inch baking dish.
- Pour half the sauce over.
- Top with chicken.
- To remaining sauce, add cheese; pour over chicken; sprinkle with additional Parmesan cheese.
- Bake at 350u0b0 for 20 minutes, or until heated through.
- Then broil just until sauce is golden, about 5 minutes.
- Serves 6.
